Gluten Free Chocolate Chip Oatmeal Bars Recipe

Looking for an easy and delicious but not overly sweet oatmeal bar recipe? Then these are a must-make. These gluten free chocolate chip oatmeal bars are also dairy free. They whip up easily using simple ingredients. They are great to pack up or grab early in the morning when you need something quick.

These bars are sure to be a hit whether you are an adult or a kid. They are a nice texture and are quick to whip up using simple ingredients. 

I used to make these more often than I do now. We try not to eat much sugar and not all of our family members eat chocolate. However, they are still delicious and a great snack for those who do.

Not only are they easy to make, they are made with simple ingredients. Not to mention you can easily make with your kids and have them quickly learn to make them on their own. Keep in mind that these bars are not overly sweet.

What you need to make

Gather The following Ingredients:

  • Bob's Red Mill Gluten-free quick cooking oats. You may also use regular gluten-free rolled oats for a chewy texture.
  • A Riced Krispie cereal such as Sprouted Brown Rice Crisps
  • Earth Balance vegan butter
  • Organic dark brown sugar
  • Organic honey (or a local and trusted source)
  • Cold or frozen Mini Dairy-Free chocolate chips or chocolate chunks
    • Mini chocolate chips may give you melty chocolate chips inside the bars like mine. Adding them frozen may help keep this from happening. They are still delicious either way.
  • 9 X 9 baking Pan (parchment-lined pan)
  • Parchment paper (dye-free)

Easy Steps to make Gluten Free chocolate chip Oatmeal Cookie Bars

A lot of the bar recipes I have seen show steps which use ingredients such as oat flour and xanthan gum. These bars are simple and do not require any of those things which is why I love them.

Also, these bars are created right in the pot. This means no large mixing bowl to clean and no need to get out the stand mixer. 

Step #1

Melt vegan butter in small saucepan on stovetop. (on low heat) 

Step #2

Once melted, pour in the brown sugar and honey and bring to a slow simmer for approximately a minute.

Step# 3

Next, pour the uncooked rolled oats and crisped rice cereal. Stir until nicely combined.

Step 4

Allow to cool a couple of minutes. Stir in the chocolate chips or chocolate chunks. Try not to over combine or the chocolate chips may melt too much like mine did. (Unless you would like to make gooey cookie bars)

Step 5

Pour the mixture into a 9 x 9 prepared pan covered with parchment paper and press into the pan using a piece of parchment paper. This ensures the bar will harden together and not make a mess of your finger tips.

Step 6

Put the pan in the oven at 350 degrees for 15-20 minutes. They should be a golden brown color when they are done.

Step 7

When the bars are done cooking, pull them out of the oven and let them cool for 10-15 minutes and bring to room temperature before cutting. If you would like to enjoy the bars sooner, put into the refrigerator to cool quicker, then cut them into bars.

Step 8

Leftover bars can be stored in an airtight container.

Gluten Free Chocolate Chip Oatmeal Bars

Cook Time: 20 minutes
Total Time: 30 minutes

These gluten free oatmeal chocolate chip bars make a great grab and go or a delicious breakfast treat.

Ingredients

  • 1/2 stick of vegan butter
  • 1/2 cup honey
  • 1/4 cup brown sugar
  • 2 cups uncooked oatmeal (rolled oats or quick cooking rolled oats)
  • 1 cup brown rice crisped cereal
  • 1 cup dairy free chocolate chips or chocolate chunks

Instructions

  1. Preheat oven to 350 degrees
  2. Melt butter in small saucepan
  3. Add the honey and brown sugar and stir until melted
  4. Bring to a slight simmer for a couple minutes
  5. Add in the quick cooking oats and riced crispy cereal and stir until combined
  6. Let the mixture set for a minute or two
  7. Stir in the chocolate chips/ chocolate chunks just until combined
  8. Pour combined oatmeal mixture into a parchment covered pan
  9. Press the uncooked bar mixture down into the pan with parchment paper
  10. Cook in the oven for 15-20 minutes.
  11. Take bars out and allow to cool for approximately 15-20 minutes before cutting into bars (alternatively, put them in the refrigerator to cool faster)

Notes

These bars are the perfect treat for you if you are looking for an oatmeal bar that is not to sweet.
